Molecular gastronomy and Asian fusion fine dining restaurant at Lebuh Pantai in George Town — 2026 Michelin Selected. Mémoire (French for 'memory') is the solo venture of Chef Chong Chian Fung, one of Penang's rare molecular gastronomy practitioners who applies precise laboratory cooking techniques — spherification, emulsification, gel textures — to local Malaysian and Asian ingredients, creating dishes that play with memory, surprise, and familiar flavours in unexpected forms.
